Matthew's Cinnamon Rolls (Vegan, dairy-free, egg-free, nut-free)

Dough: 5 1/2 cups all-purpose flour, divided 2 1/4 tsp instant yeast 1/2 cup vegan butter, melted* 2 cups vegan milk at room temperature** 1/4 cup white sugar 1 tsp salt Filling: 1 cup vegan "butter", softened 3/4 cup brown sugar 2 tbsp cinnamon, OR 2 1/2 tbsp canela cinnamon 1/2 tsp ground cardamom 1/4 tsp ground nutmeg 1/8 tsp ground cloves Preparation: Generously grease one 9x13 pan, or two deep, disposable pie tins. In a large bowl, whisk together milk, "butter", and sugar. Raise or lower the temperature to between 100F and 110F, or just slightly above body temperature. Sprinkle the yeast on top of the mixture and let sit for five minutes. Combine 5 cups of flour and salt in a separate bowl, then add dry ingredients to wet. Mix with a large spoon until just combined. Cover and let rise for one hour. Sprinkle the last 1/2 cup of flour over top of the dough. Blueberry Pie Filling (WIP)

I want to note this one down, because it's a work in progress. The hot liquid tastes good, anyway. We'll see about the pie. 6 cups frozen blueberries 1 cup white sugar 1/3 cup lemon juice 1/3 cup corn starch 1/3 cup water Pinch of cardamom AND cinnamon 1/4 tsp vanilla Pinch of kosher salt (not as much as 1/4 tsp, but taste for seasoning) Try a more traditional flour thickening next time to avoid the ghost of corn starch. Really tempting to skip the vanilla and add cayenne, or maybe just add cayenne anyway? The cardamom gives it warmth, but a little spice would probably boost the flavour. Maybe too much, though. It's already got a lot of layers. Also consider steeping some fresh thyme or lavender next time in the water, maybe, to go more floral/herbal? And maybe a little almond extract instead of vanilla?
