Coconut curry ramen soup

This was so incredibly satisfying, but I changed so much of the recipe that I need to write it down. It was kind of "white person curry", but I had more authentic ingredients in my cabinet, so I amped it up a bit.

Tofu:

1 block extra firm tofu
2 tbsp corn starch
1 tsp sesame oil
1 tbsp canola/vegetable oil
2 tbsp hoisin sauce
1 tsp soy sauce

Slice the tofu into bite-size chunks. Toss with the corn starch until it's well-coated. 

Put the canola oil into a shallow pan, and turn the heat to medium-high. Once the oil's hot, toss in the tofu. Keep it moving around until it's all crispy on the outside.

Once crispy, toss in the sesame oil, soy sauce, and hoisin sauce, and mix until all of the tofu's covered in sticky deliciousness. Set aside and keep warm. (Ideally, you'll be cooking both this and the vegetables at the same time.)

Broth and vegetables:

2 cups diced mushrooms
3 cups baby bok choy, chopped
Whites parts of 5-8 green onions, cut into 1 inch pieces (chop the green parts up finely for garnish)
1 tbsp minced garlic
1 tbsp minced fresh ginger
2 tsp curry powder
Pinch each of black pepper, chili powder, and chinese five spice*
2 cans coconut milk
4 cups vegetable broth
2 packages dried ramen
2 tsp soy sauce
Squeeze of lime juice

Sautee mushrooms, onions, and bok choy until the liquid is nearly gone. Add garlic, ginger, curry powder, and other spices and give them a minute to get acquainted.

Add coconut milk, vegetable broth, ramen, and soy sauce.

Serve with a squeeze of lime juice, and/or sesame seeds, green onions.

*Think about lemongrass and kefir lime leaves next time, especially the lemongrass. This dish trends sweet, which you actually want, but the lemongrass might deepen it a bit.

The first time I did this, I forgot the vegetable broth, so it ended up being a super-rich mess of ramen and coconut milk, and it was AWESOME. But honestly, do the broth next time to make it a little bulkier.

That said, the sauce itself came out just like the yellow curry at the local curry place, so next time, make it with some chicken, potatoes, and rice, and see how that turns out.
